Purple Sweet Potato Zoodles

When I was making this, in my head I was thinking what am I doing??

I wanted to eat zoodles since I haven't used my spiralizer in ages but I ran out of normal pasta ingredients, so in this dish there's:
1 zucchini
1 large purple sweet potato
1 piece tempeh
1/2 tbsp tomato paste
Soyaki
Unsweetened soymilk
Tanini
Olives
Strawberries
Nutritional yeast

I marinated tempeh cubes in Trader Joe's Soyaki (current favourite sauce!) and pan-fried it before adding it to pureed purple sweet potato. And then I mixed in tomato paste and soymilk to make it smoother.

I think the tomato paste was unnecessary but turned out better than expected!

I wouldn't mind making this again hehe ^^
