Baking with Oatmeal

More things you can do with oatmeal. It’s so versatile! The recipes below include those that call for oat flour, which can simply be made by pulsing rolled oats in a food processor. Each serves 1. Most of them require bananas, make sure they're spotty-ripe! J

Almond-Tofu Crust

These are more of a cake-y than crumbly crust. Fill them with whatever you’d like! Or flatten them and make it into a breakfast pizza  J Seen here are my Mini Strawberry Tofu Tarts. One is filled with rich carob tofu mousse, and the other is filled with vanilla tofu mousse. Both are topped with strawberry slices, raw tahini, a raspberry and cacao nibs/hemp hearts.

·         2/3 cup oat flour (other wholewheat flours are fine too)
·         1 tbsp flaxseed meal
·         8-10 almonds pulsed in a food processor
·         2-3 tbsp pureed silken tofu
·         Spices: cinnamon, nutmeg

1.       Mix all ingredients together well.
2.       Press into a well-oiled pie/tart pan. I divided the dough into 2 small tart tins.
3.       Bake at 180°C in a preheated oven for 15-20 minutes.
Double Pumpkin Oat Tart

Creamy pumpkin pudding in a soft pumpkin carob crust. Topped with raspberries, hemp hearts and tahini.

Pumpkin Carob Crust

·         ½ cup oat flour
·         1/3 cup pumpkin puree (or banana puree)
·         1 tbsp carob/cocoa powder

1.       Mix all ingredients together well. Dough will be mushy.
2.       Press into a small, well-oiled pie pan.
3.       Bake at 180°C in a preheated oven for 10-15 minutes, or until the crust is firm and pulls away from the side of the pan. (Meanwhile, prepare the filling)
4.       Remove from pan and leave to cool.

Creamy Pumpkin Pudding

·         1/3 cup pumpkin puree
·         2-3 tbsp pureed silken tofu
·         2 tsp chia seeds (or 2 heaping tsp flaxseed meal)
·         Spices: cinnamon, nutmeg, ground ginger

1.       Mix all ingredients well
2.       Leave to sit for 10-15 mins, until it thickens.

Pour filling into crust. Enjoy immediately or leave in fridge to chill. I chilled mine for 15 minutes.

Super Simple Flourless Oat Crust

Seen here in my Chocolate Banana Oat Pizza. It’s topped with chocolate-carob flax sauce, bananas, cacao nibs, hemp hearts, millet puffs and tahini. And that pink thing is failed pink tofu mousse ‘icing’.

·         ½ cup rolled oats, pulsed in a food processor. (I didn’t pulse them so finely for this)
·         ½ pureed banana

Mix ingredients together. Bake at 180°C in a preheated oven for 10-15 minutes.

Stuffed Pink Oatmeal Hearts

Beetroot oatmeal ‘cookies’ stuffed with Vanilla-Flax Cream and a drizzle of tahini. Shown here with a side of strawberries and chocolate banana tofu mousse, topped with cacao nubs and hemp hearts.

Beetroot Oatmeal ‘Cookies’

·         2/3 banana
·         Small chunk of beetroot, about half 1-inch-cube (more if you want it pinker!)
·         ½ cup rolled oats
·         1 tbsp flaxseed meal
·         Spices
·         Optional: 1 tbsp sweetener/ a few drops stevia

1.       Blend the banana with the beetroot. (The pink looks so pretty! J )
2.       Add the other ingredients and mix well.
3.       Shape into any shape you like. I pressed the ‘dough’ into heart shaped cookie cutters and got 8 hearts.
4.       Bake at 150°C in a preheated oven for about 15 minutes.

Vanilla-Flax Cream

·         2 heaped tbsp flaxseed meal
·         6 tbsp unsweetened soymilk
·         1 tsp vanilla essence
·         A few drops stevia (or 1-2 tsp liquid sweetener)

Stir and microwave until it forms a sticky, thick paste.

Cranberry Chocolate Oatmeal Bars stuffed with Peanut-Flax Cream

Cranberry Chocolate Oatmeal Bars

·         1 large banana
·         1 cup rolled oats
·         1 tbsp flaxseed meal
·         1 tbsp cocoa powder
·         1/2 tbsp chopped dried cranberries

1.       Mix all ingredients together. Spread onto a small, well-oiled rectangular pan.
2.       Bake at 150°C in a preheated oven for about 15 minutes.
3.       Remove from pan and cool before cutting.

Peanut-Flax Cream

·         1 tbsp natural peanut butter
·         3 tbsp flaxseed meal
·         3 or more tbsp. soymilk

Stir all ingredients together. Add more soymilk until desired consistency.

Basic Oatmeal Cookie Hearts

·         1 pureed banana
·         1 cup rolled oats
·         1 tbsp flaxseed meal (can omit)
·         Optional: 1 tsp black sesame, 1 tsp flax seeds

Mix all ingredients together. Mold into whatever shape you like. Bake at 150°C in a preheated oven for about 15 minutes.
