Rice rolls stuffed with tofu, bell pepper, carrot, purple cabbage and achar (Chinese pickled veggies), with Trader Joe's Soyaki as the dip.

It'll be great if I had rice vermicelli to add to the wraps, but nonetheless this was a light meal that's great for a hot day. I think it's even yummier to wrap as you eat but for photo purposes....

This sauce is so.. universal (?) Like it's such a great dip for everything! My only qualm is that it's really oily. And if you leave it out for too long it gets really stinky because of the garlic ^^; 

Bought this when I went to NYC and apparently the customs people in America found it suspicious so they opened my luggage and messed up all the layers I carefully wrapped it with (there was this pamphlet left in the luggage to tell us about it) -_- Luckily the bottle didn't crack! If it did I can't imagine how awfully garlicky the clothes would've become.

Purple rice sushi filled with avocado, carrot, celery, tofu, chili pepper and corn. I tried making the inside-out style rolls (uramaki) but it was such a fail because rice kept on sticking everywhere lol! Also tried hand-pressed sushi (nigirizushi) but also kinda fail because I don't know how to keep the nori from unraveling hahaha

I'll just stick to the normal rolls (according to allaboutsushiguide I think what I make is like futomaki) lol

I didn't add sushi vinegar as usual, nor did I use sushi/pearl rice, so I guess this is fake sushi ^^;

The purple rice is made with 1 cup medium grain rice (uncooked) and 2 tbsp black glutinous rice (uncooked). And it turns out so purple when cooked together - isn't it like magic?? Haha this is mum's discovery!

The toppings for nigiri sushi are: avocado - corn - carrot & chili pepper - avocado & tofu & chili - corn & avocado.

By the way Ikea tea light holders are good dishes for sauce :)

Also mum & I are going to Tokyo at the end of the month woohoo! Too bad we'll be missing the vegan festival (T.T) but there's still lotsa fun stuff to do and vegan food to eat ^^


Took me forever to figure out how to wrap this to take a proper photo lol. ^^; Good thing sandwiches are normally eaten cold

From bottom up there's:
Coconut yogurt (the same almost-spoiled one)
Tomato
Avocado (the one I baked to ripen lol)
Pan-fried gochujang (Korean red pepper paste) tofu
Alfalfa sprouts
Purple cabbage
Strawberries
Carrot shreds

The bread I used is Swissbake's Abendbrot (evening bread) which is really seedy and slightly savoury (hardly sweet at all). But from what I remember (I last ate this bread last year) I think the quality has gone down. Like it's so much more airy and the width of the bread is smaller -_-

Lol when my Dad saw this he was like 'You gonna open a sandwich cafe ah?' Haha it'll be nice if there was a fully-vegan (and customisable and generous with ingredients) one in Singapore!


Creamy CoYo soba with raw & steamed veggies and achar (Chinese pickled vegetables).


For the soba I boiled 1 bunch dry soba (from Daiso) and stirred it into a sauce I made with just 1/3 cup coconut yogurt (coyo), 1/2 chopped chili and a little water to thin it.

The coyo I bought was reduced to clear and when I opened the package it was solid (like a cream cheese consistency) -_- I tried making yogurt (like I did previously here) with it but it didn't form properly so I used it as a sandwich spread and to make this creamy sauce!

Lol people normally throw yogurt away when they suspect that it's spoiled right.. ^^;

It tasted pretty good! I didn't add salt because the soba has salt already and the achar is salty too. I've tried cold soba in unsweetened soymilk but I prefer coyo soba, taste- and texture-wise. If I buy more kinda-spoiled coyo I'll try making a mushroom cream sauce next time! :)

A quick & easy lunch of tofu scramble, rye toast and salad with lemon tahini dressing.

Managed to grill the tomatoes nicely using a grill pan I got from Cold Storage yay! :) 


How I usually do my tofu scramble is I lightly 'pan-fry' the veggies (here I used carrot, red capsicum & green capsicum) in a bit of water first, then crumble the firm tofu with my hand and add that in. Stir it around until most of the water is gone, and add nutritional yeast, pepper and a pinch of turmeric/curry powder.

I bought the avocado just the day before and it was really unripe, so I googled and found this method of ripening it quickly - wrap in aluminum foil and bake it at 120 deg C for about 20 minutes. I didn't have foil so I wrapped it in baking paper, and I had to leave it in the oven for 30-40 mins before it was soft. The avocado was easy to cut open but taste-wise it's a bit odd. Like it's slightly eggy and powdery like an egg yolk. ._. Did I leave it in the oven for too long, or should I have left it at 100 deg C instead?

When I was making this, in my head I was thinking what am I doing??

I wanted to eat zoodles since I haven't used my spiralizer in ages but I ran out of normal pasta ingredients, so in this dish there's:
1 zucchini
1 large purple sweet potato
1 piece tempeh
1/2 tbsp tomato paste
Soyaki
Unsweetened soymilk
Tanini
Olives
Strawberries
Nutritional yeast

I marinated tempeh cubes in Trader Joe's Soyaki (current favourite sauce!) and pan-fried it before adding it to pureed purple sweet potato. And then I mixed in tomato paste and soymilk to make it smoother.

I think the tomato paste was unnecessary but turned out better than expected!

I wouldn't mind making this again hehe ^^


In case you didn't read Part 1 and Part 2, these are the lunches & snacks I brought to internship (which ended on 19 Dec).

The photos are quite self-explanatory. But lemme list out everything anyway.

1. Barley grains + pumpkin + carrot

A couple of days a week my mum cooks pearl barley overnight in Magic Cooker (a post on that another time). My parents drink the barley water while I eat the grains! ^^

1. Rice pasta with a pumpkin-nooch (nutritional yeast) sauce
2. Snow peas + bean curd pan-fried in oil spray
3. Cherry tomatoes
4 Quinoa granola + apples + Charlie's berry smoothie

The rice pasta is from Giant! It comes in this other shape on the left too, which I've yet to try. The only ingredients are rice and water, and it costs less than S$2 each if I remember correctly.

Rice pasta is a bit rubbery than regular wheat pasta...but it's still not bad.

I just found out the Phonto app lets you curve words omg why did I not know earlier?!?!

2. Jap cucumber + cherry tomatoes
3. Chinese spinach + button mushroom + chili cooked in grandma's ginger chili

I feel that Larabars (or actually almost every bar) are overpriced - for example this Cashew Cookie flavour is just made of cashews and dates. It's super easy to make by yourself and you can call it yournamebar. Serenebar lol. But I have to admit that I like it because it's individually packaged & convenient and I can just throw a couple into my bag when I'm rushing out!

I can't remember why there's so little things here. Hmm maybe it was a Wednesday when I went to school to cook.

When I'm tired and uninspired I only cook one thing with the pan so I don't need to wash it again.

To cook individual portions of rice quickly in the morning, I make a larger batch of rice in the rice cooker on the weekend and freeze them into one-meal portions. Note that there's 'fried rice bacteria' that can cause food poisoning when rice is reheated. One of the few facts I've learnt in the last couple of years that are so applicable to daily life LOL. I freeze instead of refrigerate because I think it makes it last longer. (More credible explanations here, here and here)

Omg dried persimmons are the bomb! My dad bought a packet for me from Bangkok and I really liked it so I got another pack from one of those dried food provision stalls near Fortune Centre. They remind me of the dried persimmons with the poisonous powder sprinkled on top in The Moon that Embraces the Sun (a Korean period drama) lols. It's like chewy and sweet, but not too sweet!

My lunchbox is a cheap (but adequately air-tight) one from Japan Home, with a 800ml volume. My favourite thing about bringing a lunchbox is that it's way healthier than what's sold outside (of course it depends on what you put in it). The other reason why I do it is because it saves a TON of money. :D

I managed to wake up every morning at 6.15am the last two weeks to cook lunch to pack to work. It wasn't as tiring as I thought actually! Putting more effort to make my lunch taste good and look colourful makes cooking in the morning fun! And I really do look forward to eating lunch. :) 

The difference in the lunches here and in Part 1 is that these have more variety and are more filling too. There's 3 compartments of food, and I have a different main (pasta, sweet potato, wrap, rice etc.) every day. It's more satiating because there's more carbs (yay carbs!) and protein, but I try to keep the fat low. I've not put so much effort in lunchboxes since like Year 1 of poly I think, but this way, lunch is so much more interesting!

This is wholewheat pasta spirals with carrot, sweet peas and baby corn, cooked with 1 tbsp Annie's Organic ketchup, 2 tsp of my grandma's homemade ginger chili, nutritional yeast and a mix of spices. Topped with raisins for more sweetness.

On the side I have butterhead lettuce, cherry tomatoes and a tofu scramble. I've not made a tofu scramble in a long time and this was really good! I hand-crushed some firm tofu and pan-fried it with button mushrooms in a pan coated with oil-spray. Then I added turmeric, curry powder, nutritional yeast and pepper. I had it with a bit more ketchup too - ketchup makes almost everything taste good! Haha.

I always bring snacks along, for the mid-afternoon (and sometimes for mid-morning too). This was a short day, so I didn't bring much.

These are some buys from Marketplace because dad had vouchers! I LOVE Puffins! Low in sugar, high in fibre, low in fat, low in sodium, non-gmo... but still tasting great. The crunch is so satisfying!
Wasa Fibre crispbread taste wonderful too! I would describe it as delicious cardboard (maybe that's not an oxymoron after all). Emphasis on the delicious. ^^
I've tried this brand of spelt flour before and it's good. Not that my tastebuds can discern one brand from another.

  • Millet with chopped apples, shreds of carrot and raisins.
  • Lightly steamed broccoli and raw cherry tomatoes.
  • Za'atar spiced tofu and button mushrooms, pan-fried in oil spray.

The millet, za'atar spice and Charlie's smoothie were from Mustafa! See here for a haul post.

  • Too-lazy-to-cook messy wraps made with tomato & herb Mountain Bread, zucchini, carrot, avocado, red bean, nutritional yeast and a squeeze of lime.
  • Leftovers of the pasta salad.
  • Berries.

The Mountain Bread's from Mustafa too. It's like regular Mountain Bread, I can hardly taste the tomato or the herb. :(

I find Charlie's smoothies too sweet, so I usually dilute it - 2/3 smoothie & 1/3 water. This is the spirulina smoothie by the way. I didn't find the spirulina taste to be strong enough but my friend thought that it was quite prominent. 

I boiled a batch of red beans over the weekend so I had enough to add to my meals the whole week.

  • Sweet potatoes and red beans.
  • Asparagus and oyster mushrooms cooked in grandma's ginger chili, topped with chives and a squeeze of lime juice.
  • Japanese cucumber and cherry tomatoes.

The juice of tiny kaffir calamansi limes magically makes food taste great! [Edit: wow I didn't know that those are calamansis! The package just says 'small lime' -_- Took me lots more Googling to find out]
The Indian-dessert-looking things (according to mum) are Tomato Pumpkin Oat Bran Bars! I'll probably do a post for that soon.
I always bring infused water to work, because I don't really like plain water. :x Like with infused water I can drink a few litres of water but with plain water... less than a cup the whole day. So I usually add lemon, dried hawthorn slices, dried goji berries, or chia/basil seeds if I want to chew stuff.

I was packing my cupboards and found that I didn't use Orgran's Rice & Corn Pasta Penne that I bought from iHerb ages ago.
So I made a kinda veggie stew as the sauce for the pasta... perhaps blending it a little would've made it more appropriate as the sauce. It contained tomatoes, eggplant, carrots, celery, beetroot, Annie's ketchup, nutritional yeast and more (I can't remember heh). The pasta was a bit weird. Like powdery. Because it's gluten-free? Or maybe because it was undercooked. I have close to zero pasta-cooking experience lol. I shall cook it better and make a nicer sauce next time!

I was packing light that day, so I brought a wrap! It's a tomato & herb Mountain Bread stuffed with butterhead lettuce, millet, yellow bell pepper, tofu, avocado, strawberries, beetroot, carrot, red onions and ketchup.

It's quite a small wrap (one Mountain bread can't fit much without tearing) so I bought something else at the hawker centre:
It's a kueh called pulut inti. It's glutinous rice topped with grated coconut candied with palm sugar. I had no idea until I wiki-ed hehe. It was my first time having it I think. Didn't have an interest in kuehs when I was younger. Except maybe for kueh bahulu (tiny crusty sponge cakes). It was $0.70 and it was fragrant and yummy, albeit kinda oily.

  • Red bean sweet potato rice.
  • Brown button mushrooms, sweet peas and celery, 'stir-fried' in water with grandma's chili.
  • Raw carrot & bell pepper sticks and cherry tomatoes.

The rice was SO GOOD omg! I used leftover white+brown rice that I froze, and cooked it with Japanese sweet potato chunks and the red beans. I made the rice become more porridge-y and moist. I LOVE porridge-y rice. Mum tried some rice and beans and she thought that it tasted like png kueh (a pink waterdrop-ish shaped kueh filled with glutinous rice) filling, but less salty. Lol! It was also very satiating. :)

At the top left you can see the delicious cardboard.

I added strawberries and lemon to my water, and it tasted wonderful! All the pink-ness goes into the water...

And at the end of the day you get white strawberries! Cool. And I find that my water tastes good the entire day. :)

Lols my food looks so similarly colourful every day that I almost forgot to add this in.
  • Pumpkin & french bean porridge-y rice.
  • Baked eggplant strips (in a little oil spray). My friend said that it tasted like mushrooms lol!
  • Baked mushrooms, raw cherry tomatoes and butterhead lettuce.
Sometimes I bring veggie sticks too! I like carrot and celery the most because they're so crunchy.



So... packing lunch to work is really not that difficult at all! You can bring leftovers from dinner the day before, or meal prep in advance. Saves money and it's probably much better for your health too! And you can be 110% sure that it's completely vegan. ^^
