A quick & easy lunch of tofu scramble, rye toast and salad with lemon tahini dressing.

Managed to grill the tomatoes nicely using a grill pan I got from Cold Storage yay! :)

How I usually do my tofu scramble is I lightly 'pan-fry' the veggies (here I used carrot, red capsicum & green capsicum) in a bit of water first, then crumble the firm tofu with my hand and add that in. Stir it around until most of the water is gone, and add nutritional yeast, pepper and a pinch of turmeric/curry powder.

I bought the avocado just the day before and it was really unripe, so I googled and found this method of ripening it quickly - wrap in aluminum foil and bake it at 120 deg C for about 20 minutes. I didn't have foil so I wrapped it in baking paper, and I had to leave it in the oven for 30-40 mins before it was soft. The avocado was easy to cut open but taste-wise it's a bit odd. Like it's slightly eggy and powdery like an egg yolk. ._. Did I leave it in the oven for too long, or should I have left it at 100 deg C instead?

Have a great day ahead!
☺

When I was making this, in my head I was thinking what am I doing??

I wanted to eat zoodles since I haven't used my spiralizer in ages but I ran out of normal pasta ingredients, so in this dish there's:
1 zucchini
1 large purple sweet potato
1 piece tempeh
1/2 tbsp tomato paste
Soyaki
Unsweetened soymilk
Tanini
Olives
Strawberries
Nutritional yeast

I marinated tempeh cubes in Trader Joe's Soyaki (current favourite sauce!) and pan-fried it before adding it to pureed purple sweet potato. And then I mixed in tomato paste and soymilk to make it smoother.

I think the tomato paste was unnecessary but turned out better than expected!

I wouldn't mind making this again hehe ^^

Oatmeal and fruit is what I typically have for breakfast nowadays.

Recently I really like having coffee in my oatmeal. For mocha oats I use: scant 1/2 cup rolled oats + 1 tsp instant coffee + 2 tsp cacao powder + soymilk + sweetener of choice (optional)

By the way I won't be Instagramming for a while because I don't have the feel lol. Maybe next year or something when I'm in a new environment.

Have a lovely day ahead! ^^

Hello! Haven't blogged in forever! Didn't even finish about my New York trip lol. And it's not because I'm busy either - I don't know if I've mentioned it here before but I ended poly in Feb this year and I'll be going to QUT to study dietetics in Feb next year.

I've been working a bit but not full-time so I'm still home a lot of the time.. watching shows. Lol I can almost feel my brain rotting. The most study-ish thing I've done is the eCornell Plant-based Nutrition course (I'll blog about it in a later post). And the next most thing that makes me use my brain is watching The Genius (Korean reality game show) lol.

You've probably noticed that my blog design has changed. I did it 2 weeks ago using a template but the template's html is so confusing I don't know how to change things. -_- Like I have at least 5 different fonts and the Latest Post section is weird when you click the next button. And when you click on a picture in a post it blows up and takes up the entire screen. I really can't fix it so I shall live with it lol. Maybe I'll change to Wordpress or Tumblr next time.

Oh and my blog header is done by my friend Amanda! Isn't it lovely?

(haha I was inspired by her to try hand lettering/calligraphy so I bought a Copic marker.. but it's been sitting in a drawer ever since)

The food in the picture is pretty self-explanatory.

That's all for this post! I'll see if I can post at least twice a week haha. Too bad I missed the Vegan MoFo sign up or else I'd have the motivation to post 5 days a week lol ^^;

Soyato is a home-grown brand of low calorie, low-fat, non-dairy ice creams. I've previously written about Soyato here, and they've recently sent me some new samples to try!

They've launched 4 Singapore-inspired flavours:
Salted Gula Melaka Coconut
Chocolate Orange with Orange Peel
Red Bean Coconut
Red Velvet

(whoops sorry the photo didn't turn out really well)

I like the Chocolate Orange flavour the most because the orange flavour is prominent and yet it's still chocolate-y enough.

Soyato's regular flavours are sold in supermarkets but these are sold in their eStore www.soyato.com/eStore

I said that I was on a roll in my last post but apparently not lol.

I can't remember if I've mentioned it but I finished the 2 humongous bags of Earth Balance popcorn during the trip. This was the first bag (I prefer this aged white cheddar flavour more than the buttery one!) and I had the frustratingly small and crumbly bits of popcorn with Silk Almond Milk to start the day off.

We walked to Chinatown which was not that far away from our Airbnb.

It's really like you step into another country omg!! Singapore's Chinatown isn't like this because there's so many Chinese anyway. And I don't remember Melbourne's Chinatown to be as Chinese as this! Haha

There's this small park stretching across Chinatown and there were like people speaking in dialect, playing Chinese chess and doing morning exercises like this lady in the photo. Wow isn't it amazing that they can stretch with ease at such an old age?? Like the other places you can see this are China or Hong Kong or maybe Taiwan. Wow what do the old people in Singapore do then? Taiqi, brisk walking, morning zumba at the malls?? LOL

Anyway mum said that the older generation that stay in Chinatown are there for their whole lives and don't integrate into the rest of society ._. Interesting.

That arch has a name but I don't know what

Pretty flowers!

Small street in Chinatown.

First stop is the Vegetarian Dim Sum House for brunch!

It was completely empty when we entered because it was still quite early (about 11am)! We ordered 5 items. Which was too much lol!

Everything's vegan by the way (if I didn't remember wrongly) yay!

I ordered based on Yelp reviews and the first one that came was the Mashed Taro Treasure Boxes (US$3.45). This was really yummy! It's super crispy and flaky on the outside and inside there's a thick layer of taro (yam) and mock meat & stuff in the middle.

The next one is this Steamed Glutinous Rice wrapped in Lotus Leaves (US$5.50). I think I might have ordered wrongly and the recommended one could've been Mini Sticky Rice in Lotus Leaves?

This was like the rice dumplings we eat during the Rice Dumpling Festival (Duan Wu festival) but it was HUGE. H U G E. Barely managed to finish it lol. Tasted okay - nothing special.

The last 3 items were (clockwise from top) Mock Meat Roast Pork Buns (US$3.45), Spinach Dumplings (US$3.45) and Rice Flour Rolls with Vegetarian Mock Shrimps (US$3.45).

All of them tasted fine but I'm quite sure I've tasted better (vegan versions) in Singapore! Especially the roast pork buns - it was either not sweet enough or too sweet, I can't remember which.

AREN'T THE DIMSUM THINGS SO CUTE??? I don't know if it appears anywhere in Chinatown or at the eateries hmm.

Overall it was a really cheap meal considering that it's in New York plus we were extremely full AND we had leftovers we takeaway-ed!!

Chinatown fruit stands!

And then we walked to Little Italy which is right across the street from Chinatown.

Of course this place didn't give me the "Am I in Italy??" feeling haha but so amazing that suddenly there are hardly any Chinese words and few Chinese people even though it's just beside Chinatown.

Meh I've never gotten one of these because even Serene never makes it on them :(

Then we went to take the metro - this is on the platform floor at Canal Street station. Ewww isn't it great that they ban gum in Singapore?

Why are there always so many people at Broadway even though it's weekday working hours?

We went to watch Matilda at Shubert Theatre!

There were LOTS of school kids watching wow. Like 70% of the theatre was filled with kids who were there for an excursion haha. Probably because it was an early afternoon screening. How fun, they get to dress up and enjoy themselves instead of having those educational kind of school excursions lol.

We were like SUPER far from the stage haha!!

The stage isn't that small - the wall moves up so it's surprisingly big.

The performance was super enjoyable & funny and the actors and actresses (some of whom are really young - like 7 years old onwards I think) put on a spectacular show!!

When we got out of the theatre it was the warmest temperature we've experienced there!

Haha sorry I'm not circling her head.

We walked from the theatre to the Whole Food's near Central Park, and then to Sheep's Meadow (in Central Park).

The whole journey was actually quite far but we were going to picnic for an early dinner and we weren't hungry yet (must've been the glutinous rice!). It's so nice how the streets of New York are almost all perpendicular and really neat (except for Broadway) because if it wasn't I would've been much more confused and lost throughout the trip.

And so it's Picnic take 2 (the first one was on Day 2 when it was freezing cold). Leftovers from brunch, salads from Whole Foods, lemon poppy cake donuts from Babycakes (which we didn't actually eat then hehe) and apples.

Guess which salad is mine! LOL ^^

Sigh I miss this so much!

Ooooo people doing yoga. There were also people playing sports and having bootcamps too! And we were just sitting and eating hahaha

It was after-work hours so there were lots of people jogging. L O T S. Like as if people signed up for a run or something. So amazing right?! It'll be so nice to live near a place like this.

Hehe buskers providing entertainment on the train!

What my outfit looked like lol.

And that's the end of Day 7! It was an entertaining but chill day :)

All of the vegan junk food in my house together as a pizza:
Dandies Marshmallows
Trader Joe's Speculoos Cookies
Justins Dark Chocolate Peanut Butter Cups
Delcie's Rainbow Cake

On a Mountain Bread rye wrap topped with chocolate avocado fudge, peanut butter balls, strawberries and kiwi (otherwise the whole thing would be too dry), drizzled with tahini and sprinkled with hemp seeds.

I ate the whole thing and it was so SWEET omg. Especially the marshmallows - it was my first time eating marshmallows in like more than 3 years! Since vegan marshmallows are difficult to find in Singapore (they all have gelatin). Finally managed to buy it from iHerb because it was usually sold out whenever I wanted to get it. I toasted it in the oven for a while (it's not noticeable though) and the outside was a bit crispy and the inside was so soft and melty! Wow but really it's very sweet.

The Speculoos cookies (which are essentially just Lotus cookies with a fancier name and packaging) and Justin's PB cups were bought from NYC.

The peanut butter balls are homemade and relatively low in fat. It's contains just dates and peanut flour! I didn't measure the ingredients but just mix and add more peanut flour until you get a not-too-sticky consistency.

The rainbow cake was bought to celebrate my grandpa's birthday! :) Looks pretty but taste-wise I've had better vegan cakes. The cake is on the drier side and there was awful-tasting pink frosting on top. At least cakes from Delcie's are supposed to be healthier! Maybe other cakes taste better - I've tried their brownie before (it was the first vegan brownie I ate haha) and I loved it!

The chocolate avocado fudge is from the Chocolate Fudge Tart recipe that I made for Antidote!

Actually maybe the secret to stop junk food cravings is to eat all the junk food at one go LOL. Like really - I don't even wanna look at the marshmallows/chocolate/speculoos cookies now! If the marshmallows weren't so sweet I probably wouldn't feel like this though haha
